Cashew Chicken

This is a recipe I have loved since I was a child. Because I don’t care for veggies I of course leave the peppers out but then it is not nearly as pretty. (Sorry about the yellow pic, but you get the idea)

Cashew Chicken

Cut up 1lb of chicken into chunks

 

            Combine:          1 egg white

                                    2 tbs cornstarch

                                    1 tsp sugar

                                    1 tsp Lowry’s Seasoning Salt

 

Soak chicken chunks in mixture for at least 30 minutes

 

Ingredients:       ¼ cup oil (separated)

                        1 cup cashews             

                                    ¼ tsp ginger

                                    1 tsp garlic powder

                                    2 tbs soy sauce (Kikkoman is best)

                                    2 tbs cooking sherry

                                    1 Red and 1 Green Bell Pepper

 

-Add 2 tbs of the oil to a pan and cook the chicken chunks and marinade

-Add soy sauce to chicken

-Add the Red and Green Peppers (Large Slices)

-In a separate dish add the remaining oil and the cashews and cook (microwave is ok, be careful not to burn the cashews though)

-Remove the cashews from the oil and add them to the chicken

-In the oil separated from the cashews add the ginger and garlic powder, microwave for 45 sec.

-Add the oil mixture to the chicken

-Add the sherry to the chicken and cook for another minute or two

 

Serve with Rice
