Sugar                                       12 oz

Light brown sugar                   12 oz

Heavy cream                           6 oz

Milk                                        3 oz

Butter                                      3 oz

Pecans, toasted & chopped     12 oz

Salt                                          1 tsp

 

-Cook the sugar, light brown sugar, heavy cream, milk and butter to 230 degrees

-Add the pecans and salt and cook to 237 degrees

-Remove from heat & cool to 212

-Add vanilla and stir vigorously for 45 seconds and deposit in small amounts on parchment paper
