Dark Chocolate Mousse

1 lb Dark Chocolate

9 oz Butter Cubed

5 oz Egg Yolks

12 oz Egg Whites

2.5 oz Sugar

-Melt chocolate over hot water (or double boiler if you have one)

-Remove from heat & add butter cubes one at a time till melted

-Add the egg yolks one at a time

-Beat the egg whites till soft peaks, add sugar till just before stiff peaks

-Fold in the egg whites to the chocolate mix

Add any decorations and serve in any dish. Top with unsweetend ship cream because this mousse is very sweet and rich as it is. This recipe is rather large and will make enough for about 15 people depending on portion size.
