Coffee Marshmallows

Gelatin                                    1.5 oz

Water, cold for hydration        8 oz

Glucose                                   12 oz

Sugar                                       24 oz

Honey                                      4 oz

Invert sugar                             4 oz

Water                                      6 oz

Vanilla                                    1 oz

Coffee extract                          1.5 oz

 

-Stir the gelatin into the cold water for hydration

-Combine the sugar, glucose, honey, invert sugar, and water in a saucepan and cook to 252 degrees

-Pour the cooked sugar into a mixing bowl and allow to cool to 212 degrees

-While the syrup cools, melt the hydrated gelatin over a hot water bath

-Mix the melted gelatin into the cooled sugar. Whip on high speed for 8 minutes or until well aerated. Add the vanilla extract and coffee extract

-Spread into a half sheet pan lined with oiled parchment paper

-Place a piece of oiled parchment on top of the marshmallows. Flatten the top by hand until smooth.

-Dust with a mixture of equal parts confections sugar and cornstarch and shake to remove the excess mix
