Brittle
My favorites are the pecan/chipotle and peanut, I am not crazy about the sesame but a lot of people enjoyed it as well. This is my favorite recipe for brittle and as long as it is stretched thin before it cools it will be the lightest best brittle you have had as well.
Brittle
Sugar 1lb 12 oz
Water 12 oz
Glucose 1 lb 4 oz
Raw peanuts 2 lb
Or Sesame seeds 500 g
Cocoa nibs 200 g
Pecans 700 g Chipotle 2 tsp
Salt ½ oz
Butter 2 oz
Vanilla ½ oz
Baking soda ¼ oz
-Combine water, sugar & glucose in heavy saucepan, bring to boil, stirring constantly
-Clean sides of pan with a pastry brush
-Continue to cook to 115 Celsius
-Add peanuts and salt. Stir gently over high heat to 155 Celsius
-Remove from heat and stir in butter and vanilla. Once incorporated, add the baking soda and mix well.
-Pour out oiled marble. Let brittle cool just enough to handle.
-Stretch out to lacy consistency
-Cool completely and break into pieces.
