Pizzelles (Italian Style)

Pizzelles 

Preheat pizzelle iron

Ingredients:       12 eggs

                        3 ½ cups sugar

                        1 lb melted butter

                        8 tsp baking powder

                        ½ tsp salt

                        2 Tbs anise oil (NOT extract)

                        8 cups flour

Mix eggs, sugar, baking powder, salt and anise oil. Slowly add the melted butter while stirring (we don’t want scrambled eggs here) and then mix in the flour gradually.

Put small spoon of dough in the center of the iron and close the lid slowly to make them even. Lift after several seconds and remove once lightly browned.

Allow to cool on parchment paper till firm.

Optional: Cover half of one side of the cookie in chocolate for an extra special treat!
