Halloween Treats 2007

This year I made treats for work. I made a pumpkin cheesecake, candy corn cookies, pumpkin dip, and cinna chips to go along with the dip.

Candy Corn Cookies Cream Cheese Sugar Cookie Dough           

Ingredients:      

3 oz cream cheese (softened)                                   

½ cup butter (softened)                                   

2/3 cup sugar                                   

½ tsp. baking powder                                   

1 egg                                   

½ tsp vanilla                                   

2 cups flour                                   

Chocolate Coating: White and Milk or Dark Chocolate Coating (melt in double boiler or cautiously in the microwave)

-In a large bowl beat cream cheese and butter with an electric mixer on medium speed for 30 seconds.  Add sugar and baking powder; beat until combined.  Beat in egg, and vanilla until combined.  Beat in as much of the flour as you can with the mixer.

-Stir in remaining flour with a wooden spoon.

-Use red and yellow food coloring to die the dough orange.

-Cover and chill for 2 hours.-Shape into triangles and bake at 350 for 10 to 13 minutes or until edges are light brown.

-Once cookies are cool dip the tip into the white chocolate and the base into the milk or dark chocolate. Set on wax paper and let harden by cooling in the fridge or outside.

Pumpkin Dip (Put in pumpkin as the bowl for an extra cute garnish)

Ingredients:      

2 (8 oz) packages of cream cheese, softened                       

2 cups powdered sugar                       

1 (15 oz) can of pumpkin puree                       

1 Tbsp cinnamon                       

1 Tbsp pumpkin pie spice

1 Stick of butter (1/2 cup)

Mix well until smooth.

Pie crust mini cutouts (2 pie dough recipes)

            Roll out your pie die and cut with shapes of your choice. Get a bowl of about ½ cinnamon and ½ sugar and cover both side of the dough with the mix. Place each on a cookie sheet and bake for about 10 minutes or until lightly crisp.
